July 28 is National Milk Chocolate Day, according to NationalDayCalendar.com. This sounds like a holiday our taste buds are happy to support! Organic bananas are the perfect accompaniment to milk chocolate, and this twist on a banana bread adds a touch of sweetness with milk chocolate chips. The addition of the oats in this recipe allows you to eat it for breakfast without guilt, or serve it for a snack or dessert.
Ingredients
- 1/2 cup butter
- 1/2 cup white sugar
- 1/2 cup brown sugar
- 2 eggs, beaten
- 2 tsp vanilla extract
- 1 cup all-purpose flour
- 1 cup quick cooking oats
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/2 cups mashed bananas
- 1/4 cup milk
- 1/2 cup chocolate chips
Instructions
- Preheat oven to 350 degrees F (175 degrees C).
- Grease a 9×5-inch loaf pan and set aside.
- Cream together the shortening and sugar. Add eggs and vanilla; beat until fluffy.
- Sift together the flour, oatmeal, baking soda, salt and cinnamon. Leaving out the chocolate chips, add dry ingredients alternately with bananas and milk. Mix until blended.
- Fold in chocolate chips and pour into prepared pan.
- Bake for 50 to 60 minutes; remove from oven and let cool for 5 minutes.
