Chocolate Chip Banana Bread
Makes 1 loaf
Ingredients
- 1 stick (8 tablespoons) unsalted butter
- 2 cups flour (any combination of whole wheat and all-purpose)
- 1 teaspoon salt
- 1 1/2 teaspoons baking powder
- 1/2 cup sugar
- 1/4 cup brown sugar
- 2 eggs
- 3 ripe bananas, mashed with a fork
- 1 teaspoon vanilla extract
- 1/2 cup unsweetened coconut flakes
- 1/2 cup chopped walnuts
- 1/2 cup semi-sweet chocolate chips
Instructions
- Preheat oven to 350°F. Grease a loaf pan
- Mix together the dry ingredients. Cream the butter and beat in the eggs. Stir this mixture into the dry ingredients, being careful not to over mix. Stir in vanilla, nuts, coconut, and chocolate
- Pour the batter into your greased pan and bake for 50-60 minutes until a toothpick inserted in the center comes out clean. Cool on a rack for 15 minutes
